Homemade Raw Date Syrup

This is one of the easiest recipes you’ll ever make! I first made it way back in 2010, and it’s such a handy natural sugar substitute.

It is obviously NOT sugar free since dates are still full of natural sugars. However, if you are going to make something sweet, then you can at least use a natural sugar source rather than something like bleached, processed caster sugar. Plus, it’s also got lots of fibre in it, which we all know is great for us.

Dates are a fantastic natural, raw sweetener but obviously in their normal whole form, you can’t add them to everything (aside from straight in your mouth!). Turn them into a liquid however, and you have a mild tasting sugar substitute. I have used it to substitute everything from in baking to in a green smoothie or even in my cup of tea or hot chocolate.

You must use the Medjool dates (organic preferably) as they are juicer and blend better. The lemon juice just helps to keep it fresh, you won’t taste it all. You can also experiment with adding some vanilla extract or even some spices if you want it to be flavoured. I can totally see this being gingerbread flavoured in a beautiful glass jar as a gift!

You can also reduce the amount of water you add and you will that have a beautiful sweet date spread.

Serves: 2 cups
Ingredients
  • 10 organic Medjool dates, pitted
  • 1¾ cup water
  • 1 tbsp fresh lemon juice
Instructions
  1. Place all ingredients in a blender and start the blender on a low speed to allow the dates to break up initially, and then blend on high for a few minutes until smooth. Pour into a clean glass jar and store in the refrigerator for up to 3 weeks.

    hi Zeo, thanks for date recepy, i tried to make it but it is like a syrup i want to make something like in the image your blog. color is important for me what should i do to have smooth bright color as you know there are several type of dates which almost all of them in dark brown color. furthermore, for a small Jar lets say 300 gr Jar give me ingredients pls.
    Should i keep in refrigerator or freezer always? or in normal room temperature can be used? How about Bacterial and infections issues as we are using water i think it may cause problem if we use it in long time?

    Hey Shahram 🙂
    + dates vary in size, so you might need to reduce the water content if you want the final syrup to be a bit thicker.
    + don’t worry about the colour, that’s mostly just the lighting in the photo … it’s normally a bit darker really.
    + 1 cup = 250ml, so you can simply half the recipe.
    + store in the fridge to keep it fresh.
    + lemon helps keep it fresh, and note the shelf life of up to 3 weeks in the fridge. make sure you use a sterilised, clean jar too 😉
