Protein Pancakes with Collagen

If you love Protein Pancakes, then you are going to LOVE Protein Pancakes with COLLAGEN. Specifically, hydrolysed collagen!

Yes, I’m aware that sounds a bit odd, but this stuff is GOOD for you. It’s kinda like gelatin, but a bit different … in terms of why I put it into the protein pancake recipe, it also helps to bind the mixture together and stops them crumbling apart. Especially if you’re using oat or coconut flour.

You can also just throw a scoop in your smoothie, you won’t taste it!

What is Hydrolysed Collagen?

Specifically, these pancakes use the Great Lakes Gelatin Hydrolysed Collagen which is unique in its amino acid structure because of its high amounts of glycine, lysine and proline.

These particular amino acids are found to generate cell growth much quicker because the natural ability to produce supporting amounts of connective tissue diminishes after the age of 25. Hydrolysed Collagen is more easily digested because of its low molecular weight and is absorbed within 30 minutes. All of the amino acids collectively are beneficial to cell reproduction, but it is the distinctive spectrum of this product that impacts the metabolic pathways to healthy tissue.

Hydrolysed Collagen is beneficial in replacing the synovial fluids between the joints and secondly, to repair and build cartilage weakened by overuse through impact and stress. Our bodies are made up of 30% collagen of which 70% of these proteins are connective tissue made of collagen.

As we mostly have a diet that’s high in muscle meats (beef, chicken, lamb, turkey etc), not balanced by other protein sources (eggs, fish, dairy, shellfish, organ meats etc); this can contribute to inflammation in the body over time (source). Therefore, it can be beneficial to take some hydrolysed collagen when eating these more inflammatory muscle meats; apparently, this will help the amino acids enter the bloodstream at the same time.

Detoxification Phase 2 support

Another thing that gelatin/collagen is good for is supporting phase 2 of detoxification. It has a unique and non-inflammatory amino acid profile, including the following:

  • Glycine
  • Glutamic acid
  • Proline
  • Alanine

Now, these are non-essential amino acids i.e. your body can make them. But your liver may be stressed and therefore not able to create all the non-essential amino acids in the amounts demanded by the body during the detoxification process.

Phase 2 of detoxification requires amino acids (often missed on crappy juice fasts or fad diets like the Lemon Detox diet) to facilitate the removal of the toxins from your body. This, in turn, reduces inflammation in your body – a big win! Your liver also needs a lot of these proteins to function at it’s best on a day to day basis too.

Protein Pancakes with Collagen

Note that you must use this collagen specified – it’s quite different to the normal stuff you grab at the supermarket! I got mine here.

Protein Pancakes with Collagen

Ingredients
  • 200 ml liquid egg whites OR 3-4 organic eggs
  • 1 tbsp psyllium husk
  • 75g organic berries of choice
  • ½ tbsp Hydrolysed Collagen
  • 1 tbsp PB2 (or 1 tsp peanut butter – optional, to drizzle over top)
  • 1 tbsp coconut flour or gluten-free flour (optional, I made mine without)
Instructions
  1. In a blender, combine all the ingredients together, except the PB2 or peanut butter.
  2. In a non-stick pan, cook pancake mixture on a low heat, a few minutes each side until golden brown.
  3. Mix up the PB2 or peanut butter with a little water to make a yummy sauce and drizzle over top.
